CERVO - starter 

Artichoke 

Let simmer in oil - 60-65° for about 1h hour until soft like a potato. 
Stem peeled. Outer layer taken off, take out the heart. Open the flower and put i down in a tray, with the inside of the flower facing down.
Fry in oil - 165°.


Romesco sauce

Bake tomatoes in the oven on 180° with foile for 30 minutes. Peel when cool.
Grill bellpepper and a grill or in the oven for color, the foil on top to make it soft. Peel when cool. 
Garlic - whole - with foile 65° for 1,5h or more until soft. Peel when cool.
Almonds roasted, without peel.
Hazelnuts roasted, without peel.

Rapeseed oil
Sweet paprika spice
Salt

Mix all until smooth.
